Its History

Wooden barrel fermentation ruled the brewing world for many years, until it disappeared during the industrial revolution. After many years of being shunned, the barrel is now making a comeback. The successive passages of wine and spirits allow the barrel to accumulate aromatic elements. This memory of the barrel influences the beer and allows it to develop new aromas and gain in complexity. The Brasserie des Légendes has revived this ancestral technique by installing a cellar in Ellezelles where patience and silence are the watchwords.
